Sparkling Kiss Cocktail
Happy weekend friends!! Today I wanted to share a little cocktail recipe with you that's perfect for Valentine's Day with your honey or Galentine's with your girls! It's super light, a little bit sweet, and has just the slightest hint of rosemary to create a very classic and simple cocktail. Its also great as we (hopefully) move into warmer temps and anything with bubbles is a great idea in my book!! For my non drinking or expecting friends, this can very easily be made into a mocktali as well which is actually the original recipe inspo by Purely Katie. I hope you guys love it because I sure had fun putting my own spin on this lovely little cocktail for you all to enjoy (and B didn't mind taste testing either lol)!!
Sparkling Kiss Cocktail Recipe
Prep Time: 1 hour
**(keep in mind some components have to be chilled before use)
Assemble time: 5 min.
Ingredients:
4 large ruby red grapefruits
granulated sugar
Fresh rosemary
1 bottle sparkling rose' // sparkling water for mocktail
water
ice
Instructions:
Begin by making the rosemary simple syrup. Also begin chilling your sparkling rose' at this time. Combine 1 cup water and 1 cup granulated sugar in a small pot on the stove and cook over medium heat. Stir occasionally until sugar is completely dissolved (do not allow mixture to come to a boil). Remove from heat and pour into a heat safe container (I used an empty mason jar). Place 3 sprigs of rosemary into the jar and set aside for at least one hour.
Next make your grapefruit juice. Homemade juice for such a simple cocktail really makes a difference in flavor. Cut the 4 grapefruits in half and juice them into a large bowl or pitcher. (Put one used grapefruit half to the side)
Once all 4 have been juiced, strain the juice to remove any seeds or pulp. Add water to grapefruit juice to dilute. (This is really to personal preference based on how you like your juice; I'd estimate between 10-15 oz. of water). Add sugar (to taste) to the juice mixture and stir well until sugar is dissolved.
Refrigerate juice for at least an hour.
To assemble your cocktail, start by sugaring the rim of your glasses. For this I used the saved grapefruit half to juice the glass edges before dipping them in sugar giving the sugar rim a little grapefruit hint as well!
Next place 1 sprig of rosemary in each glass.
In a cocktail shaker, fill halfway with grapefruit juice. Add 2 T. of rosemary simple syrup and ice. Shake to stir and chill and fill each cocktail glass halfway with juice mixture.
Lastly, top off each glass with sparkling rose'. Don't forget to CHEERS!
Hope you guys enjoy!!
