Snack On The Go: Oatmeal Raisin Protein Balls


Hi friends! I wanted to share the most recent favorite recipe to hit our kitchen with you all! B and I are both snackers and are always in need of a great to-go option! I've also recently tried to become a lot more conscious about what we're eating to promote overall health as well and to take baby steps to getting in shape for the wedding {doing all the squats!}. With that in mind I found a great recipe on Pinterest and put my own twist on it to get a little extra protein in each day!! You can switch up the ingredients and make them your own which I love!! They are so easy to make too! These are definitely going to become a staple in our fridge for the Spring and Summer and they really are so yummy!

Ingredients:

  • 1/2 cup raw nuts (I use walnuts)

  • 1/2 cup vanilla protein powder

  • 1 cup old-fashioned instant oats

  • 1/2 cup raisins (can also use dried cranberries, blueberries, or goji berries)

  • 1/2 cup all natural peanut butter

  • 1/4 cup honey

  • 1 teaspoon pure vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/8 teaspoon ground nutmeg

Directions:

  1. In a high power blender or food processor, mix the raw nuts and protein powder and pulse until finely ground and well combined.

  2. In a stand mixer (or a large mixing bowl) combine nut/protein mixture, raisins, peanut butter, honey, vanilla, oats, and spices until well combined.

  3. Using a small cookie scoop, scoop mixture and roll into 1 inch balls. The mixture should stick together, if not, add a little more peanut butter.

  4. Store in the refrigerator in an airtight container. Enjoy!!
