The Easiest 20 Minute Dinner


Ever find yourself wanting to keep to your healthy eating habits but lacking much time to put together a great meal? Are you someone who's wanting to make a great dinner for your friends or significant other but your not the strongest or most confident in the kitchen? Are you looking for a new dish to change up your normal rotation? Well I have an insanely easy and incredibly delish dinner to share with you guys tonight!

I was looking for new proteins to add into our diet besides chicken and beef when I started to think about some of my other favorite dishes. Growing up, my mom would make cedar plant teriyaki salmon on the grill and it really was the dish that taught me to love fish! The bummer is that we don't have a gas grill (I'm not about that charcoal life) and cedar planks have to soak all day to be grilled on, so I set out to recreate the great flavors minus the extra work. After a little trial and error, I can honestly say this is a fan favorite at our house and I hope you'll love it too! P.S. if you're a lover of Trader Joes like me, this meal is a one stop shop!!

Ingredients:

  • 1 bottle teriyaki sauce (I use the trader joes brand)

  • Salmon Fillets (I get 2 packs so we have leftovers- I get the ones that are pre cut because they're single serving pieces and so easy to pack for lunches or meal prep)

  • 2 bags of haricot vert (green beans)

  • 4-8 cloves of fresh garlic

  • olive oil

  • jasmine rice, brown rice, or quinoa

  • salted butter (optional)

Cooking Instructions:

  1. Preheat your over to 425 degrees F if you have a convection oven, you may consider dropping it to 410-415 degrees.

  2. Lightly grease a 9 X 13 pan and place single serve salmon fillets, skin side down, on the pan ensuring that none of the pieces are touching. (Pro tip: I like to pat dry my salmon before getting it down on the pan to eliminate extra fishy flavor and minimize liquid)

  3. Glaze the salmon with teriyaki sauce. You can use a basting brush OR if you have no clue what that is you can drizzle/pour the sauce directly onto the fish. Makes sure each piece gets a generous and even coat for good flavor!

  1. Steam the haricot verts in the microwave for 4 minutes. I like to get the ones you can steam in the bag to minimize dishes and cleanup!

  2. Pour steams haricot verts onto a cookie sheet and spread evenly as possible.

  3. At this time you'll want to put on 2 cups of jasmine rice (or the grain of your choice). You can cook it however you prefer. I personally use my instant-pot because it makes PERFECT rice and I do 2 cups of rinsed rice:3 cups water.

  4. Once your rice is started, drizzle the haricot verts with about 2 T of olive oil and then add a few pats of butter on top. You can use as much or as little butter as you like!

  1. Top the verts with crushed or chopped garlic (if you like to cook with fresh garlic I HIGHLY recommend picking up a garlic press to save yourself a whole lot of chopping!)

  2. Place the baking sheet with the haricot verts onto the top rack of your preheated oven and the pan of glazed salmon onto the middle rack.

  3. Bake for 20 minutes. (Pro tip: I like to take my basting brush or a spoon to reglaze the salmon with the run off sauce in the pan with about 7-10 minutes of cooking time left. I also like to quickly toss the haricot verts so they get evenly coated in oil/butter and so the garlic doesn't dry out of get over cooked.)
